INGREDIENTS Green Mango COOKING INSTRUCTIONS Mix Shana Green Mango with the salt and leave in a tight container for 1 day. This should create a brine. Take the Green Mango out of the brine and keep separately, making sure the mango is dry. Mix the red chilli powder, coriander seeds, fenugreek seeds, nigella seeds and turmeric powder together. INGREDIENTS Guar COOKING INSTRUCTIONS Heat oil in a pan and add mustard and carrom seeds, fry until they pop. Add asafoetida and stir in the garlic. Fry for half a minute before adding in the Shana Guar and 150ml of water. Cover and bring to the boil. Simmer on low heat until the Guar is tender. Add tomatoes and remaining ingredients. Cook for a further 5 minutes or until the sauce thickens.
