Green Mango is actually unripe mango, enjoyed for its crunchy and nutty texture. Shana Green Mango may be used immediately from frozen, making it a tidy and convenient way of enjoying the fruit at its best.
Our fruits are frozen close to the time of harvest to ensure they retain a higher level of vitamins and nutrients. Absolutely no water is added during the IQF (Individual Quick Freezing) process, providing you with nature's best.
- Mix Shana Green Mango with the salt and leave in a tight container for 1 day. This should create a brine.
- Take the Green Mango out of the brine and keep separately, making sure the mango is dry.
- Mix the red chilli powder, coriander seeds, fenugreek seeds, nigella seeds and turmeric powder together.
- Heat the oil and then add it to the spice mixture
- Add the Sugar to the brine, then add the spice mixture once it has cooled Mix in the Green Mango thoroughly and store in a sterilised jar
